Mezcal and Bourbon Barrel-Aged Imperial Stout with Cocoa Nibs, Sea Salt, and Mezcal Barrel-Aged Mexican Vanilla Bean

For every moment occurs whether you experience it or not. The clocks ticks without your permission. To embrace the myriad impulses. To believe in the occurrence of great spectacles. That is to be alive. A fragment of time that will pass before us in this AnnoXI. The product of many hours of sampling strong ales from our wood cellar, this excitedly curious pairing of Mezcal barrel fruit and smoke paired some incredibly well with our dark fruit and caramel Woodford Reserve barrel-aged stout that we married the two together with French Broad cocoa nibs, Mezcal barrel-aged Mexican vanilla bean and a dash of sea salt. An incredibly diverse range of Mexican spiced hot cocoa, sweet citrus chocolate cake, Bourbon vanilla frappuccino and dark chocolate-dipped black cherries.

11th Passing Imperial Stout with Toasted Macadamia,⁠ Pistachio, Hazelnut, Oats, Burial Coffee, Methodical Coffee, Medjool Dates, Orange Zest, Smoked Sea Salt, and Cognac Barrel-Aged Ghanan and Mexican Vanilla Beans

For selfish purposes. The sanctity of thinking for none. The urgency of everything. The uselessness of caring too much. For capturing tiny bouts of laughter. And being with them infinitely. A blend of 3 Imperial Stout bases, aged with 11 different things of beauty. House roasted Macadamia, Pistachio and Hazelnut, toasted oats, Burial Daytime Coffee Blend, Methodical Coffee Blend, aged Medjool dates, fresh orange zest, smoked sea salt and a blend of Ghanan and Mexican vanilla beans aged in a Cognac barrel. A delicate thunder of festivity falls under this veil of flavorful Holiday rum cake, a box of assorted chocolate truffles, and salted caramel over vanilla bean soft serve with crushed nuts.

A Blend of Whiskey Barrel-Aged And Oak Barrel-Aged Sour Ale With Strawberries

For finding breath. Somewhere to walk clear of the thorns. For gliding across the tops of steady waves. A story of wild ale we have been dreaming of telling for over a decade. 2000# of carbonic-fermented strawberries sit atop golden sour ales aged in fresh whiskey barrels and neutral oak from former wine casks. Aged together, the blend of terroir of our house flora and early-picked strawberry yields bright a bevy of delicious delicacies.

West-Coast Style India Pale Ale (Collaboration with clipping.)

For the means to shake the tempo. Something now that the weight is off. Anything for body and blood.  A collaborative work for AnnoXI with our friends at clipping. Made pure of barley. Double dry-hopped with hand-selected Mosaic, Eldorado, Blanc, Simcoe and Mosaic Cryo.

Foudre-Aged Pilsner

For no audience. Something sensible even if conceivably mundane. One satisfaction for the yearn. If only to fortify the purity of the intention. A modest Pilsner base, fermented low and slow, and whirlpool hopped with Saaz and Hersbrucker. Carbonated naturally through the beauty of pressure, in our American Oak Foudre.
